Zea (from a Greek name for a related plant) mays (from the Mexican name for corn, Maize) is one of 4 or 5 species of mostly annual grasses that inhabit disturbed areas and field margins of Central America. Zea mays, or corn, is an extremely valuable cereal crop of the tropical and temperate areas of the world. Corn (and its derivatives) have found literally thousands of uses in the industrial world.

Popcorn is a variant of field corn that has hardened kernel coatings that trap moisture inside the kernel. This moisture pressurizes when heated causing the kernel to explode the starchy center to expand 20 to 40 times its original size. Popcorn is a long season corn that must be allowed to dry entirely on the brown and withered stalk, then brought indoors and allowed several weeks more drying time in ventilation to get a good high percentage of popped kernels.
